Creole-style Chicken with Vegetables
3 tbs oil
450g (1lb) boneless, skinless chicken breast, cubed
2 tbs Schwartz Grill & Sizzle Special Blend Cajun
225g (8oz) tin pineapple slices in juice
350g (12oz) potatoes, cubed and par-boiled
1 red onion, chopped
100g (4oz) sweetcorn
1 red pepper, diced
STEP 1
Heat 1 tbs oil in a frying pan and fry chicken for 3-4 minutes until golden. Add 1 tbs Cajun Special Blend. Cut the pineapple slices into chunks and add to the pan with 2 tbs of the pineapple juice.
STEP 2
Meanwhile, in a separate frying pan, heat the remaining oil and fry the potatoes and onion until browned. Stir in the remaining Cajun Special Blend, sweetcorn and red pepper and fry for a further 2-3 minutes. Serve the chicken with the pan-fried vegetables.
