Aromatic Chicken & Chickpea Tagine


1 tbs olive oil
1 onion, sliced
1 tsp Schwartz Easy Garlic
450g (1lb) boneless, skinless chicken breasts, sliced
½ tsp Schwartz Turmeric
1 tsp Schwartz Cinnamon Ground
1 tsp Schwartz Coriander Ground
1 tsp Schwartz Cumin Ground
1 red pepper, diced
400g (14oz) tin chickpeas, drained
125g (5oz) fresh tomatoes
2 tbs honey
1 tbs Schwartz Coriander Leaf
3 tbs tomato purée
200ml (7fl oz) chicken stock

STEP 1

Heat the olive oil over a medium heat and fry the onion and Easy Garlic for 3-4 minutes until softened.

STEP 2

Add the chicken and fry for a further 4-5 minutes, until browned.

STEP 3

Add the spices and cook for 30 seconds. Add the remaining ingredients and bring to a gentle simmer.

STEP 4

Reduce the heat and simmer for 20 minutes, stirring occasionally, until the sauce has thickened.
