Aromatic Chicken & Rice


1 tbs oil
450g (1lb) boneless, skinless chicken breast, diced
2 tbs Schwartz Stir Fry Special Blend Chinese 5 Spice
350g (12oz) rice
1 red pepper, diced
Juice and zest of 1 lemon
1 tbs honey
1 tbs light soy sauce
450ml (¾ pint) chicken stock
100g (4oz) peas
100g (4oz) mange tout, halved

STEP 1

Heat the oil in a large saucepan and fry the chicken until browned. Add the Chinese 5 Spice Special Blend, rice and red pepper. Fry for 1 minute. Blend together the lemon zest and juice, honey, soy sauce and stock and add to the pan. Bring to the boil. Cover and simmer gently for 25 minutes, stirring occasionally.


STEP 2

Stir in the vegetables and cook for a further 5 minutes or until the rice is tender, adding a little extra water if necessary.
