Cajun Chicken Stir Fry
1 tbs oil
450g (1lb) boneless, skinless chicken breasts, cut into strips
4 tsp Schwartz Grill & Sizzle Special Blend Cajun
1 onion, sliced
1 green pepper, sliced
2 large carrots, cut into matchsticks
1 tbs cornflour
1 tbs tomato pureƩ
200ml (7fl oz) chicken stock
215g (7½oz) tin pineapple in juice, cut into chunks
STEP 1
Heat the oil in a large frying pan and fry the chicken, Cajun Special Blend and onion for 4-5 minutes until browned.
STEP 2
Add the pepper and carrots and fry for 2-3 minutes. Blend the cornflour with the tomato pureƩ, chicken stock and 4 tbs pineapple juice.
STEP 3
Add to the pan with the pineapple chunks and bring to the boil, stirring until thickened. Simmer gently for 1 minute.
