Cajun Chicken with Corn
For the chicken:
1 tbs oil
4 tsp Schwartz Grill & Sizzle Special Blend Cajun
450g (1lb) chicken mini fillets
For the corn on the cob:
8 mini corn on the cobs
1 tbs oil
To garnish:
1 lime
100g (4oz) watercress
1 orange, cut into segments
STEP 1
In a large bowl, combine the oil and Cajun Special Blend. Add the chicken and mix to evenly coat. Transfer the chicken to a heated wok and stir fry for 7-10 minutes, or until cooked through.
STEP 2
Meanwhile, bring a medium pan of water to the boil and add the corn on the cob. Boil for 5 minutes. Remove from the pan and drizzle with the oil. Griddle or grill for a further 4 minutes, or until cooked through.
STEP 3
Garnish the corn on the cob with Chilli and Coriander Leaf and serve with the chicken.
STEP 4
Delicious with a watercress and orange salad and garnished with lime wedges.
