Coq au Vin


1 tbs olive oil
1 onion, sliced
175g (6oz) lean bacon, sliced
450g (1lb) chicken portions, skinned
1 packet Schwartz Coq au Vin Recipe Mix
300ml (1/2 pint) water
125g (5oz) baby button mushrooms
STEP 1

Pre-heat the oven to 190°C, 375°F, Gas Mark 5.



STEP 2

Heat the oil and fry the onion and bacon for 3-4 minutes, until browned. Add the chicken and fry for a further 3-4 minutes, turning occasionally. Drain excess liquid.



STEP 3

Transfer to a casserole dish. Blend the packet contents with the water and add to the dish with the mushrooms.



STEP 4

Stir thoroughly, cover and cook for 1 hour or until the chicken is cooked
