Coriander Chicken Salad


1 tbs olive oil (or a light spray-on cooking oil)
450g (1lb) chicken breasts, cut into strips
1 tbs Schwartz Coriander Ground
1 tsp Schwartz Garlic Granules
1 red pepper, sliced
1 bunch spring onions, sliced
Zest and juice of 1 lemon
2 tbs orange juice
1 bag mixed leaf salad

STEP 1

Heat the oil in a frying pan and fry the chicken, Coriander and Garlic Granules for 5-6 minutes until browned.



STEP 2

Add the pepper and spring onions and fry for 1-2 minutes. Stir in the lemon zest and juice and the orange juice and heat through.



STEP 3

Toss into the salad and serve immediately.
