Coriander Chicken
2 tsp Schwartz Coriander Leaf
Zest and juice of 1 lemon
1 tsp caster sugar
2 tbs light soy sauce
4 x 225g (8oz) skinless, boneless chicken breasts
3 tsp Schwartz Stir Fry Special Blend Thai 7 Spice
Lemon wedges and rind to garnish
STEP 1
In a non-metalic dish mix together the Coriander Leaf, lemon juice and zest, caster sugar and soy sauce. Coat the chicken in the marinade and leave for 15 minutes.
STEP 2
Pre-heat the grill and cook the chicken under a medium heat for 20 minutes, turning occasionally.
STEP 3
Serve the chicken with rice and pan fried courgettes. Garnish with lemon wedges and rind
