Flavourful Chicken Tikka Masala


1 tbs light olive oil
1 onion, sliced
1 packet Schwartz Flavourful Tikka Masala Recipe Mix
400g tin chopped tomatoes
450g (1lb) boneless, skinless chicken thighs, diced
300ml (1/2 pint) milk
325g (11oz) long grain rice

STEP 1

Heat the olive oil and fry the onion over a medium-heat for 4-5 minutes, until lightly browned.



STEP 2

Sprinkle in the packet contents and cook for 30 seconds to release the aromatic flavours. Stir in the tomatoes and simmer gently for 1-2 minutes.



STEP 3

Add the chicken, stir and cook on a high-heat for 2-3 minutes, reduce heat and simmer for 15 minutes until the sauce has thickened and the chicken is cooked through.



STEP 4

Meanwhile, cook the rice according to the packet instructions. Drain.



STEP 5

Add the milk to the curry and simmer for 1-2 minutes, or until the sauce is cooked to your desired consistency.
