Chicken & Coconut Curry


450g (1lb) boneless, skinless chicken breasts, diced
Juice of 1 lemon
1/2 tsp Schwartz Garlic Granules
1/2 tsp Schwartz Ginger Ground
1 tsp Schwartz Fenugreek Ground
pinch Schwartz Cayenne Chilli Pepper
1/2 tsp Schwartz Turmeric
1 tsp Schwartz Coriander Ground
1/2 tsp Schwartz Cumin Ground
2 tbs oil
1 medium onion, sliced

300ml (1/2 pint) boiling water
50g (2oz) creamed coconut, crumbled
1/2 tsp Schwartz Garam Masala
Salt to taste


STEP 1

Toss the chicken in lemon juice and the first seven spices. Heat the oil in a large pan and fry the onion until soft. Add the chicken and brown.



STEP 2

Stir in the water and creamed coconut and simmer for 20 minutes, uncovered. Stir in the Garam Masala and season to taste.
