Curried Chicken & Avocado Sandwich
75g (3oz) light mayonnaise
2½ tsp Schwartz Medium Curry Powder
pinch Schwartz Chillies Crushed
450g (1lb) boneless, skinless chicken breasts, cooked and diced
1 avocado, peeled and cubed
25g (1oz) dried cranberries
2 tsp Schwartz Coriander Leaf
8 slices wholemeal bread
8 lettuce leaves
STEP 1
Mix the mayonnaise, Curry Powder and Crushed Chillies in a large bowl, until well blended.
STEP 2
Add the chicken, avocado, cranberries and Coriander Leaf, toss gently to mix.
STEP 3
Divide the chicken mixture evenly among 4 slices of the bread. Top with the lettuce leaves and remaining slices of bread.
STEP 4
Serve immediately.
